Frequently asked questions
A brewery needs a brewer's notice from the federal Alcohol and Tobacco Tax and Trade Bureau (TTB) and a Florida alcoholic-beverage license, and distilleries and wineries apply under their own federal and state permit types. Those applications describe the premises, so the building plan and the licensing paperwork tend to move together. Ask the licensing agencies what they need to see and when.
A taproom where the public gathers to drink is an assembly space. Beyond the building permit and its engineer-sealed steel drawings, the plans get fire-marshal review under the Florida Fire Prevention Code, the site needs zoning or site-plan approval, and the public areas carry ADA accessibility requirements.
Taller than the tallest tank by enough to tip it upright, set it, and reach the top fittings. The fermenters you plan to grow into matter as much as the ones you start with, and a forklift or hoist adds its own clearance. Settle the tank list before the eave height is fixed.
Brewing floors take hot water, spilled wort or mash, and caustic cleaners every day. They need a slope to drains, concrete heavy enough for full tanks, and a finish or coating that holds up. Drains and slopes are fixed when the concrete is poured, so the production layout comes first.
Commonly, yes. The two areas are reviewed as different uses, so expect walls, doors and exits planned between them, and accessible routes on the public side. Many owners put a glass wall or window between them so guests can see the tanks.
Steam from the kettle, cold tank jackets and humid air all work against bare metal panels. The roof and walls are insulated with a vapor strategy, and the brewhouse gets exhaust over the kettle and air movement across the floor.
It can. Brewing wastewater is high in sugars and solids, and many utilities limit what can go down the drain or ask for pretreatment. Ask the local utility what they require before the floor drains and the site connection are designed.
